Rajma/redkidney beans sandwich

Sometimes I get bored of doing Indian style of lunch/dinner everyday. This sandwich is perfect for such days when you need a change in routine. Ingredients needed for this are simple and you almost always have it in home. And with leftover beans, you can make nice breakfast too(just need to refrigerate it). These beans testes even better as time passes, may be it absorbs all spices well with time. Here is the recipe my way.

Ingredients:
1 can(8oz.) red kidney beans
1 cup onion cut in squares
1/2 teaspoon garlic/ginger paste
1/2 cup tomatoes
1/2 teaspoon chilli powder(according to taste)
1/4 teaspoon turmeric
1 teaspoon black/garam masala
3 tablespoon oil
salt and little sugar(if you like) to taste
Bread slices
Butter 1-2tbspoon
Grated cheese(Mozzarella preferably)
black paper powder to sprinkle

Method:-
Cook the beans so that you can easily mash it, discard water if any.
Heat the oil in pan, add onion(1/2cup) and ginger garlic paste. Before it turns brown, add all spices mix well. Add tomatoes and cook foe 2-3 minutes. Add mashed beans. Cook for some time. Let the beans mix rest till it gets cool. Put the butter on both side of bread slices, sprinkle black paper if you like. Put beans mix, top with cut onion and grated cheese. Put it in sandwich maker. If you are using tawa then roast until breads turn brown and cheese melts. Serve hot.

Enjoy. See you with my next post, till then take care. Have a nice day everybody. Bye bye.
