eggplant with moongvadi

My mom sometimes makes moong wadi with vangi(eggplant). This combination tastes real good. In Maharashtra, specially in summer time, we make moong wadis, oh in big lots. Basically it's paste of moong dal with some spices.Then make small drop in wadis and keep in it hot sun. That's it. I have no idea if Indian store has Moong wadis here. I always brought it from India. Anyways, here goes the recipe my way.


















Ingredients:
2 cups eggplant cut into squares
1 cup moongwadi
1 teaspoon chili powder.
1/4 teaspoon turmeric powder
1 teaspoon masala powder
1/2 cup oil
1/2 cup tomato cut into small pieces
1 teaspoon crushed garlic
1/2 onion cut into squares
Seasoning and
salt to taste.

Method:
Heat the oil in a pan, add mustard seeds. Add onion to it. Let it cook for one min and add garlic paste. Add all the spices, chili powder, and turmeric. Keep spatula moving add tomato and let it cook till it becomes like paste. Now add eggplant and moongwadi and salt.















Let it cook for 3 to 4 minutes. Then add about 2-21/2 cup hot water.
Let it cook for about 10minutes or till eggplant/brinjals get completely cooked. Serve hot with chapatis or rice.
